Chef's Restaurant It's a discreet house, tucked away in a small village on the outskirts of La Rochelle, where you'll find a team as professional as they are engaging, communicating both their pleasure at a job well done, and the expression of exemplary know-how. Cécile and Renaud have an eye for detail, and through their love of the product, develop a dense and committed reading of the terroir. The chef rethinks her cuisine season after season, in menus full of inspiration, for all fortunes: lobster and vegetable ravioli, lobster-oil roasted claw with saffron-infused bisque, turbot fillet with zucchini flower, lobster mousseline stuffing, zucchini cream and shavings, lobster sauce flavored with ginger and lemongrass, the duo of lamb, rack of lamb in a crust of herbs and black garlic, shoulder confit then shredded in a cromesquis, seasonal vegetables with garden herb gnocchi, chanterelles and spicy marjoram jus. Lucas Perdoux's patisserie creations include Charentais melon crumble, sorbet and lemon verbena-infused siphon, as well as kalamansi lemon and basil parfait glacé, lemon cream and candied Menton lemon slice. The cellar is Renaud's domain, advising on a well-stocked classic catalog (Leflaive, Yquem, Beaucastel, Maucaillou, Beychevelle, Pichon Baron, Cos d'Estournel, Palmer...).
