For over fifteen years, Mathieu Viannay has run this emblematic establishment, and it has lost none of its charm or its shine. And that's exactly what the lucky visitors to this remarkable Rue Royale institution are looking for. History with a capital letter, but also flamboyance and prestige. The MOF chef strives to provide this rare essence, this successful compromise between loyal tradition and personal achievement. The menus are well-executed to compose the pleasures of spider crab, tourteau and osciètre caviar, the famous artichoke and foie gras, scallops, apple and turnip boule d'or with green curry, which create a dilemma with the unavoidable pike bread with crayfish in Nantua sauce, before sweetbreads with miso, chestnut gnocchi and pickled celery, sake jus and chestnut and whisky soufflé, Royal Gala apple with coffee and cardamom ice cream. The trip isn't all that expensive (a grand menu at €195) for this timeless Lyonnais enchantment, aided by a fine cellar of grands crus.
