Remarkable Restaurant It's a monument that must be visited: Mère Brazier 2023, ninety years after Eugénie Brazier's triumph at our pneumatic colleague's (Gault&Millau wasn't born yet), can be proud. Never have the French, and among them millions of good forks, loved tradition so much. So Mathieu Viannay and his chef Olivier Reverdy can happily do away with the hairpieces and go straight for the memory, the legendary dishes and those of haute cuisine bourgeoise that we all love today. In this unique setting at the end of the Rue Royale, let's indulge in the eternal pleasures of artichoke and foie gras, pike-bread with crayfish in Nantua sauce and Bresse poularde demi-deuil. There's always time to come back for dishes that are a little more experimental, but still vigorously in line, such as scallops, turnip porridge and mandarin butter with sauternes, or the unexpected pairing of abalone and packet feet. The desserts are not lacking in the same panache (clementine soufflé and Grand Marinier), the cellar is immense and the expense unforgettable. A perfect match for the Eugénie Brazier menu at €175.
