Remarkable Restaurant A temple, an experience that must be lived, and not to be approached innocently. Here, at the end of Rue Royale, stands this monument to Lyon's gastronomic history. Mathieu Viannay has preserved its nobility and extended its legend. His plates are well laid out, at attention, with the prestigious part blending with the gentrified Lyonnais tradition, and at the same time curious about new flavors: sea urchins from Galicia, haddock and butternut for a little surprise, pike-bread and smoked eel with matelote sauce for reassurance, Grenoble sweetbreads with pimprenelle juice for a beautiful finish, unless your commensal agrees to share a big autumn pleasure with you: cabbage stuffed with game birds, foie gras and truffles... It's the Brazier spirit that perfumes this rare moment, in a naturally memorable setting. Well-crafted desserts (chestnut and potimarron chestnut whisky ice cream), a classic cellar of grands crus, a fine Eugénie Brazier menu at €185.
