Élisabeth and Philippe Michel have been running this fine establishment for a quarter of a century now, with undeniable consistency and good taste. Today, it is one of the most popular hotels in the region, thanks to its beautiful traditional architecture, its comfort, and, of course, its classic cuisine. On the €95 menu: fresh turnips, miso fish broth, green oil, coastal hake, a fondue of mild vegetables with Bresse chili, and haddock béarnaise; or Sisteron lamb, green peas, fava beans, panisse, and a génépi-reduced sauce.
