Chef's Restaurant It's a warm mountain house in the heart of the Cévennes, in that part of the country that Stevenson loved so much. It's an authentic family-run hotel, in a classic, even traditional style, where families can enjoy pretty inn-style rooms, and fine regional cuisine to rediscover the region. The 52 € menu includes a plate of charcuterie from Lozère, a panaché of old-fashioned tomatoes, burrata and reduced balsamic pesto, a revered risotto with seasonal vegetables and old rodez, a piece of Aubrac from Bousquet, beef jus with condiments, cébettes, tomatoes and black olives, pressed potatoes and seasonal vegetables, a nage of apricots and peaches in sweet-spice syrup.
