Remarkable Restaurant If he is the pride and joy of his father Michel, it's because Louis Chabran is a quick learner, and brings an assertive and promising modernity to the tradition of good living at "Maison Chabran", which has stood on the Nationale 7 for 90 years. Of course, his vision doesn't stop at the kitchen, and the major renovation work undertaken this winter to add fourteen new rooms and a swimming pool opens up some very exciting prospects. The "Grande Table", the in-house gastro, is packed every evening, in winter for truffles, and all year round for pleasure, the young entrepreneurial chef showing patience, lucidity and potential, on the right trajectory for a cuisine that is refined in the house culture: generosity with crayfish ravioli with sweetbreads and bisque, or Breton scallops with excellent, crisp crosnes, happiness with game as we like it, venison hazelnuts, a true Chabran dish with a tight jus, Jerusalem artichoke purée with a hint of truffle, or royal-style wild boar bonbons in a gourmet brick pastry. We conclude with the pear dessert, taking advantage of the kind and attentive bilingual service, well supervised by the faithful Rodolphe, and enjoy the vast and beautiful Rhone cellar from which to draw the best of the crozes, hermitages and saint-josephs.
