Gourmet Restaurant A warm and welcoming hotel just outside Chalon-sur-Saône, with a swimming pool and easy access to the "Autoroute du Soleil", making it an ideal stopover on the road to vacation. In the kitchen, chef Nicolas Birault prepares a contemporary, traditionally-inspired market menu, well represented in the €27 set menu. Bresse poultry is revisited as a starter, pressed with morel mushrooms and vegetables; fountain salmon is snacked, with broad bean vinaigrette and kalamansi vinegar; also pressed lamb shoulder confit with dried apricots and almonds, sage jus, followed by a diplomatic pear cream, chocolate coulant and poached pear.
