Remarkable Restaurant Pleasure, luxury, relaxed chic, Alsace! Nicolas Stamm, a dynamic chef and business manager totally committed to both his house and the region, and Serge Schaal, a passionate accomplice attentive to the perfection of the ballet in the dining room, offer a rather unique representation of Alsace with each service, to the extent that one could hardly imagine a Fourchette des Ducs in any other corner of France. The splendid setting (Lalique, Spindler, Baccarat...), the elegant terrace and the precision of the service all contribute to the success of the event. For it's a real treat to taste this refined, racy cuisine in such a setting. While paying tribute to his producers, Nicolas designs his universe with the same passion as on day one: jambonnettes de grenouilles sabayon oseille sauce herbes velours de persil ail des ours et cressonnette, a starter that is both classic and subtle with its well-balanced plume of herbs, saint-pierre meunière with a fleischnacka de brochet chou à choucroute sauce raifort infusion de crevettes grises miel de Melfor, before beautiful desserts in the same spirit of revisited classics (paris-brest, pêche Melba, crêpes Suzette, vacherin glacé...). Remarkable cellar, with Serge's erudite commentary, well classified and rich in old vintages, notably the great Alsace vintages.
