In recent years, there has been a rapid succession of chefs at the piano of La Flibuste, but Roger Martins, the captain of this proud vessel facing the marina, on the first floor of one of the famous Marina Baie des Anges buildings, has always known how to choose the right ones. Succeeding the Anne Legrand/Clio Modaffari duo in 2024, Italian-Belgian chef Valerio Borriero and head chef Klervi Poullain propose an original cuisine that blends the Mediterranean and Brittany in a rather masterful grand écart, including an original reinterpretation of the "complete Breton Klervi style", these include an original reinterpretation of the "complete bretonne à la Klervi", based around a blancmange, an egg yolk confit insert, a sliced ham torchon (house-made), Swiss Emmental cheese and a cider emulsion, before a more consensual poultry fillet cooked in binchotan, steamed bao confit legs and béarnaise sauce. The desserts are of a high standard (including a delicate use of chocolate), the wine cellar is adequate and the atmosphere is pleasant, both in the dining room and on the outside terrace, which is quiet but does not overlook the port.
