Remarkable Restaurant Roger Martins knows how to unearth outstanding chefs season after season. We've already tasted the fine cuisine of Eugénie Béziat, now at L'Espadon du Ritz, and that of the female duo Anne Legrand and Clio Modaffari with their instinctive proposals, and now it's the turn of 31-year-old Valerio Borriero to set sail and surprise. The Italian-Belgian chef, who trained with Alexandre Couillon among others, is in total control of the elements. His dishes are intelligent and meticulously crafted, in keeping with the blind menus that La Flibuste has always offered. When the weather's nice, let's take a seat on the elegant green terrace and let ourselves be carried away by one of the two evening menus, priced at €105 and €145 for 4 and 6 courses. The fine buckwheat tartlet and its tartare of Mediterranean sea bream, ricotta, herbs and cucumber with a basil and cucumber water sorbet bring the freshness, while the country zucchini in all its states with its lacto-fermented beurre blanc proves that a simple vegetable dish can teach us a lot. And the Dombes duck, with its declension of eggplants, pressed, roasted, confit and creamy on a carcass jus, brilliantly closes the savory chapter. The desserts are reminiscent of childhood: buckwheat crumble with fresh raspberries and two-course rice pudding with sun-drenched apricots are just two examples. The cellar is sufficient with its hundred or so references, and the service is ideal. The three toques are retained.
