Chef's Restaurant The smells, the ambience, the view... you're right at home at La Ferme, and then some. Nestled in the heart of the Velay region, almost lost in the middle of nowhere, this former 17th-century farmhouse is now a hotel-restaurant-spa where well-being reigns, almost like an injunction to happiness. In the kitchen, Quentin Allirand imposes his menu, but leaves a small window of choice, by publishing it in a sealed envelope. On this particular day, a superb "Rivière" starter was served, where trout and eggplant blend perfectly in familiar, joyful flavors. The "Souvenir d'été"; agnolotti tomate mozza eu de tomate fermentée is a fine exercise, the veal liver is daring in a hidden, but very successful menu, lacquered soya chimichurri beans verbena broccoli fermenté and the desserts are of the same technical and gourmet level, like this really perfect asparagus glazed parfait. The service lacks a little rhythm, but the efforts are sincere and the cellar built by Clélia Aziez conceals a few nuggets at very reasonable prices.
