Prestige Restaurant Jean-Michel Lorain, who was our Chef of the Year in 1993, is now leaving the reins to his nephew Alexandre Bondoux, who has the onerous task of bringing this immense legacy to fruition (although we did catch a glimpse of the ever-present uncle on our last visit). For the moment, the lights are green, because the dining room (to be completely renovated in 2023) is magnificent, modern, uncluttered, even daring to do without tablecloths on the very pretty tables (unique handmade pieces, combining wood and resin), because the view over the garden, the monumental sculptures symbolizing a shoal of fish and the Yonne is superb and because the plates are fully committed to a new era while retaining, like the superb floating island with Kristal caviar, black garlic jelly and light horseradish cream, or the addictive blanquette of lobster "pattes bleues" and new vegetables, whose emulsified sauce, into which lobster concentrate is poured, is an absolute delicacy. Special mention should also be made of the pike-perch fillet with Burgundy truffle pôchouse sauce, and the strawberry gariguettte dessert with lovage syrup, which shows that the patisserie has a real answer for itself. Top-notch service, huge Burgundy cellar.
