Chef's Restaurant
Jean-Paul Acker is indeed the right man for the job—a highly trained chef with a long career who steers the course of this prestigious restaurant. After all, cooking at a Relais & Châteaux establishment means striking a balance between prestige, local ingredients, and a demanding yet understated simplicity that must appeal to everyone. The chef effortlessly solves this equation in this superb setting, with a grand tasting menu that lives up to its promises: Sturia sturgeon caviar with leeks and potatoes, confit turbot with endive tips in a grapefruit reduction and tarragon, a tangy sauce made from the fish bones’ juices, Kieffer pigeon with a pink fillet and shredded thigh, squash, and a full-bodied jus infused with cacao nibs, tarragon-infused figs, a ganache whipped with buffalo yogurt, streusel, and a crispy cigarette… Featured producers; a well-stocked wine cellar managed by a knowledgeable sommelier.
