Remarkable Restaurant You could say, "Don't change a thing", but that's just the way Joël Césari is: he needs to constantly evolve his house, his menu, his cuisine. And that's why the people of Dolois, and all the travelers who enter this traditional-looking establishment, are so won over. Fresh, local, and above all, quality and intelligence to magnify the terroir: perchettes meunière, garlic-fried hummus with lemon confit and ginger, lobster with tarragon passion or the beautiful poularde de Bresse with morels and vin jaune, in a €118 menu that doesn't forget the fine Jura cheeses. Complete Burgundy and Franche-Comté wine cellar.
