Remarkable Restaurant There are tables that use and abuse "hidden/imposed" menus, where every ingredient seems to be weighed to the gram, where every food and wine pairing is designed solely to maximize margin, and where all satellite dishes have disappeared at the same time as the number of people in the dining room has melted away. And then there's Florian Descours' Boria, where the party's going on all the time, where everyone, in the dining room and in the kitchen, seems visibly happy to be working (turnover is virtually nil), where the dining room is always full (close to 100% by 2023, according to a few confidants) and where the only thing you want to do when you leave is to share this good deal with the whole world. Every mouthful is a delight, between elegance and gourmandise, the cellar is more fascinating every year (and commented on by a sommelier and his assistant who are as passionate as they are fascinating) and every dish served seems better than the last, right down to the desserts signed by the discreet Xavier Ballin. The dining room is magnificent, spacious, bright, airy and rustic, the selection of cheeses impressive (you get up to discover and choose them from the wine cellar) and the view of the Ardèche countryside, which provides almost all the products on the menu, majestic.
