The Perrin's table reflects the prestige of the family, owners of Château de Beaucastel and savvy managers of this fine experiment in the village heights. Under the direction of chef Thomas Boirel, their address celebrates the terroir of the South of France with taste and precision, and showcases his mastery in a fine seasonal menu at €75. These include vegetable ravioli with celery and shrimp jus, Mediterranean mackerel with leek and sorrel, veal fillet from Aveyron, broccoli and mushroom, and a dessert of Valrhona chocolate, beet and balsamic vinegar. If you're looking to move upmarket, try the truffle menus, priced at €125 and €195.
