Chef's Restaurant This year, there were a few minor hiccups in the service of our 5-course menu (€110), with meat served before the starters, but everything fell into place with a smile and we concentrated on the quality of the plate, the poached brill, beautifully cooked, with a lemony fish aroma, yet curiously placed before the vegetable plate (Borlotti beans, lovage oil, parsley tuile, touch of fennel, fine beet jelly) and a fine composition of dashi trout roe jelly, salmon green zebra sorbet and a well-matured, slightly nervous beef picanha. In this pleasant, well-run contemporary room, the pace is good right through to the two well-thought-out desserts (verbena ice cream, fresh raspberries, light sobacha mousse, and dark chocolate cigar from Ghana topped with mousse and creamy chocolate sorbet, and whisky caramel). Full cellar, with a good selection by the glass.
