In Fondettes, L'Opidom has been going from strength to strength since Jérôme Roy took over in 2019. Trained by Thierry Marx, Michel Troisgros and Pierre Gagnaire, the chef's technical and rigorous cuisine is rooted in a classical base, which he revitalizes with contemporary touches and a few well-assumed Asian influences. The bright, modern dining room, with its palette of blues, grays and ecru, offers a comfortable, peaceful setting, despite its direct access to a busy thoroughfare. The plates reflect a real savoir-faire: a fresh winter starter, driven by the vegetal and precise cooking of the knives, followed by a perfectly mastered poularde, whose work around the thighs, enhanced with soya and horseradish, brings relief and character. The dessert confirms this quest for balance, playing on textures, the acidity of red fruits and a controlled use of rum. In the dining room, a large, stable brigade ensures fluid, rhythmic service, supported by a pertinent sommelier and a rich wine list, with a clear view of the Loire. A safe table, where technical mastery takes precedence, even if the whole would benefit from a stronger narrative thread to take it a step further.
