Gourmet Restaurant At Hervé Battiston, the emphasis is on well-ordered tradition, in a timeless, no-fuss setting. The atmosphere is open and inviting, supported by a friendly clientele and authentic bare stone. On the menu: scrambled eggs and sea urchin tongues, Neuvic caviar, pollack cooked with mother-of-pearl, virgin hazelnut oil from the Moulin de Veyssière and broad bean mousseline, sole meunière, Burgundian-style beef cheek and marrow tartine, a traditional Paris-Brest or a Périgord walnut moelleux with custard. Local winery; Bergerac wines are the logical choice.
