Chef's Restaurant In the foothills of the Pyrenees, in the gentle Comminges region, this beautiful property has been given a new lease of life. Set in idyllic green surroundings, the former Hostellerie des Sept Molles is turning over a new leaf and taking on a new lease of life. In particular, the restaurant has been brought up to scratch thanks to the contribution of Jérémy Lasserre, a chef with an impressive CV (Willer, Ducasse, Gagnaire in Asia), who joined the house recently bought by his parents. His cuisine is contemporary and personal, much more refined than rustic, based on fine local produce: morels from a nearby picker on the perfect egg, duck with foie gras escalope from Daniel's in Saint-Gaudens, the good idea of "l'Aneto" for dessert, Pyrenean transposition of mont-blanc, kumquat and mandarin accompanying the chestnut. We still need to bind the whole thing together a little, bet on relaxation and naturalness for a young reciting service, and enrich the cellar, so as to take advantage of a place with undeniable assets.
