Gaétan Evrard has done an excellent job of upholding the reputation of this essential restaurant in gourmet Touraine. Montbazon has a rich history, and choosing “L’Evidence” means opting for this thoroughly modernized spot, tastefully decorated in a simple yet cozy atmosphere. Regulars make the trip almost without a second thought, placing their trust in the chef, who can thus offer hidden-menu options starting at €79 for a five-course meal, in addition to the lunch menu—also a surprise menu—which attracts diners from the surrounding area with its €33 price tag.
