Chef's Restaurant By the end of 2017, Gaëtan Evrard had moved his Evidence to Montbazon, and his cuisine fortunately didn't suffer from this short move. In fact, it has grown and flourished, ever closer to nature and the seasons, both traditional and playful. Admittedly, customers have to make do with these hidden menus, but the principle is known in advance and the plates all flirt with the third toque, right down to the very fine desserts by Rémi Berment. Extensive wine cellar, especially for Loire Valley wines.
