Gourmet Restaurant From Rémi Poulain, a former member of the Tour d'Argent, we would expect nothing less than technical cuisine and fine products, in keeping with his apprenticeship. Noble products are applied to purged compositions, reduced to the essentials, such as a beautiful pâté croûte, poultry, foie gras and pistachio, a whole blue lobster and small vegetables, a Galician pig rib, a two-cooked duck, zucchini, peach and coriander, a Valrhona chocolate soufflé. An equally upright cellar, with Philippe Chesnelong and Julien Pilon.
