Even though the restaurant is a short walk from downtown, food lovers don’t hesitate to make the short trek to Thomas Compagnon’s table, knowing they can count on consistent excellence here. Having been in business for over ten years with his wife Virginie, the chef creates a beautiful, reimagined Burgundian cuisine, presented with the same care as the restaurant itself: a flame-seared Crisenon trout fillet, tarragon mustard sorbet, a vegetable medley with honey glaze; sea bass fillet with bouchot mussels, green beans, potatoes, peppered seafood emulsion; rare beef, a mix of figs and grapes, confit red cabbage and smoked beets, Pinot Noir sauce; or a roasted veal sweetbread, a delicate honey tartlet, sunflower seeds and tangy squash, caramelized onion jus; and finally, a cocoa-flavored gavotte leaf with soft caramel, puffed rice, hazelnut, and roasted coffee ice cream. An excellent regional wine cellar (Rapet, Drouhin, Buisson, Jessiaume, Sauzet, Tollot-Beaut…).
