Chef's Restaurant It's the hallmark of a fine French-style restaurant: a warm, bourgeois interior with a hint of greenery, a tempting menu with a wide range of dishes, including a veggie menu, and a professional, friendly welcome... And that's not all, as you'll be amazed at the spacious wine list: all Burgundy at all prices, from fine appellations (Fixin, Mercurey) to great names (Trapet, at random), from negociants to bargains everywhere, including Jean-Paul Brun's Beaujolais (it's not surprising that the other regions, apart from Champagne, are a little neglected). Once the ceremonial details have been taken care of, the chef appears: Thomas Compagnon is at ease in this off-center house that Beaune residents frequent assiduously, his words clear, but not banal, on snails, which he offers with finesse and gourmandise on a mint-mustard, paris and artichoke sauce, duck breast with rhubarb or Arctic char with vegetables of the moment and bear garlic chardonnay sauce. The well-oiled service seems happy to please, and the €57 Découverte menu is just right, right down to the gavotte cacao caramel riz soufflé and roasted hazelnuts.
