Chef's Restaurant Not far from Perrache, on the other side of the Rhône, l'Écume brings a little serenity to the hustle and bustle of this busy district. Here, Laurent Bonnet offers well-prepared, legible and pleasing plates based on seasonal and market produce, through his hidden menus: a very well-made parsnip and mushroom cappuccino, a good stuffed cabbage accompanied by spelt, cauliflower and lightly-vinegared cherries, before the tarte tatin discreetly spiced with ginger and accompanied by a caramel shyly flavored with morels. Xavier Lamande, the head sommelier, creates pertinent pairings and recommends a few discoveries.
