Jean-Pierre Vullin set up shop here opposite the Royal Monastery of Brou in 1977, and has been passing on the Bresse heritage ever since. It's an experience of great tradition, led by a seasoned chef whose vision of the product is as generous as ever. For special occasions, the table is a must, with escalopes of warm foie gras, golden pear with acacia honey, lobster gratin with Brillat-Savarin saffron, Bresse poularde with Jura Savagnin and morel cream, a royal of orange chocolate, Napoleon mandarin sorbet.
