Chef's Restaurant Eric Boutté leads his Aubergade with fervor and skill. The contemporary dining room is elegant in its sobriety, in the image of a cuisine that concentrates good flavors on top-quality products: lobster brunoise in a tomato shell, jelly and tomato water, sliced cherries, monkfish mosaic embroidered with green cabbage and walnuts, roasted veal medallion with celery and radish in a gribiche-style sauce in a fine €69 menu that ends with a gourmet banana chocolate peanut passion fruit dessert. The menu, like the wine list, offers a wide choice.
