Having worked with some of the greatest chefs—including Delaveyne, Robuchon, and Lorain—Éric Boutté has extensive experience in the fine-dining world, which he has brought back to his home in the Somme Valley. Together with his partner Anne-Gaëlle, he has been running this esteemed restaurant for nearly twenty-five years, making it a go-to destination in the suburbs of Amiens. On the menu: crab meat crumbled over a thyme shortbread, light cauliflower cream, a steamed turbot fillet, small shellfish marinière, celery and chorizo mousseline, the famous cabbage dish in homage to Delaveyne—served leaf by leaf with a foie gras-based stuffing—and the Queen Claude dessert, featuring stewed fruit and white chocolate cream, crumble, and ice cream.
