Remarkable Restaurant L'Atelier du Peintre: fifteen years of creations, including eight with three toques. Its success continues unabated. Opposite Martin Schongauer's house and a stone's throw from the Ancienne Douane, Caroline Cordier and Loïc Lefèbvre have put together a cuisine, setting and service that stand out from the other restaurants in this very touristy district. We love the atmosphere of this anthracite-tinted urban setting, punctuated by dark parquet flooring, copper tones and vintage lighting by Catellani & Smith. An alumnus of Willer, Chibois and Pourcel, Loïc Lefèbvre's solid expertise is put to good use in his well-thought-out, punchy cuisine-passion. He achieves the difficult balance between richness and clarity of flavor. The organic hen's egg from South Colmar is enhanced by a tasty emulsion of potato and bargkas (Vosges tomme), a full-bodied jus and a generous grating of melanosporum truffle. A seductive duck foie gras terrine! It's paired with doe tartar, curried cashew paste and a hearty celery mousseline, even if the whole is a little drowned out by the celery juice. This cuisine also knows how to take care of fish: the sea bass rosette is accompanied by an amusing dill oil and an apple juice that brings sweetness and acidity. Oysters are served in fritters for a play on soft-crisp textures. As if by magic, this chef knows how to transform a classic dish like rack of lamb by adding a grating of Kalamata black olive. Whimsy and lightness flow through to the desserts: Sicilian mandarin orange presented in the form of a wheel and surrounded by the hand of Buddha, or pretty chocolate cylinders combined with tansy and white coffee ice cream. Under the leadership of Caroline Cordier, the attentive service is just as enthusiastic, thanks to a team built around a few old hands with an eye for everything. Valère Roussel, a jovial and sharp sommelier, offers his advice from a cellar that contains all the best in France.
