Keigo Kimura has perfectly adapted his knowledge and culture: it's a pleasure for the people of Dijon to find such a fine and precise way of working on plates, with products from here, ideas from elsewhere or vice versa. The market menu at €45 is very attractive, while the six-course Dégustation menu takes you on a wonderful journey for €95: cauliflower chawanmushi, catfish kombu, white asparagus dashi zucchini, foie gras olive leek, sweetbreads shallot eryngi... On each plate, an idea, a design, a harmony of flavors, right through to the desserts. Top-notch service, well-stocked wine cellar in Burgundy and beyond.
