The toque is holding its own well in this Haute-Marne town, where locals find comfort and regularity. The recently refurbished dining room is welcoming, the Maître-Restaurateur label is well-deserved and chef Didier Muckenhirn takes great care with his dishes, changing his menu every season: pan-fried razor clams, champagne sabayon, chicken supreme stuffed with artisanal black pudding, brioche perdue, for a well-turned sequence at less than €50.
