Chef's Restaurant Fairness and loyalty are the watchwords of Patrick Olry, who never fails to execute his classics in this long-established restaurant. From the delicate ceviche of scallops and Sète shrimp to the generous sweetbreads of lamb, roasted monkfish tail, artichoke barigoule and baby vegetables, the chef shows his ease with just the right raw ingredients, cooked dishes, seasonings and juices. A gentle bourgeois atmosphere through to the citrus dessert, a well-constructed cellar with a wide price range.
