Chef's Restaurant In the midst of the sandwich shops, the establishment seems almost incongruous, an elegant mansion where the elite of Béziers come to find refuge as best they can. The place seems frozen in a sacralized early 21st century, a happy memory of a splendor that has lost none of its charm, if we avoid comparisons. The varnished wood, the blurred glass and the double tablecloths on the tables establish a beautiful bourgeois soul, which then unfolds in the plates, with their omnipresent choice products, flattering chef Patrick Olry's technique as much as a clientele in search of recognition that appreciates the largesse of a house faithful to itself. These include scallops à la dieppoise with coral, sweetbreads in a shiitake and truffle arborio, with a pretty chicken and celery sauce. Classic desserts, like a cocoa cookie with chocolate ganache and praline. Traditional and regional wine cellar, with references for special occasions.
