Gourmet Restaurant A true chef's bistro and a quasi-institution since Vergé, a place run by a team that knows how to do things well, efficiently and profitably. In this location and with this reputation, fuel for tourists might suffice, but the celery velouté as an appetizer, the onion and beef broth, both rustic and delicate, even if a little lukewarm (so as not to completely cook the beef strips, understandably), the cod, in the spirit of an aioli, and the warm chocolate and pepper chantilly tart with grapefruit sorbet and cocoa gavotte, the best of the meal, prove that there's respect for the profession, the brand and even the region, in an impeccable €45 menu (the more expensive a la carte menu is perhaps a little less attractive in this respect).
