Remarkable Restaurant In a small street near the Allées Paul Riquet, the entrance is discreet, almost confidential. And yet, this "second" Gilles Goujon house is also the first in town. Thanks to the commitment and professionalism of an entire team, and the constant match between a personality (that of the owner, through the brilliant chef Quentin Pellestor), a region, and this successful, gourmet plant-sea fusion. The result is a very elegant interior in the shape of a welcoming cocoon, great service and sublime dishes: the Bouzigues oyster (tartar, poached, seaweed jelly), the gourmet flaky tartlet with porcini mushrooms and celery from the garden, the just-stiffened yellowtail, eggplant confit, tomato sorbet and "Bloody Marie-Christine" (a nod to Gilles' wife), the beautiful royal sea bream and Pardaillan turnips in matelote, the "moussaillon" tartine with mushrooms and kasha... A sequence that ends just as well with apple (reinette and api) as a buckwheat Tatin with sweet cider sorbet. A plethoric cellar, logical prices for these three toques who neither cheat nor bluff, as close as possible to the truth of taste.
