If the winter experience is less exciting than in midsummer, on this lively terrace on Place des Corps Saints, we're not forgetting all the baggage developed by Julien Gleize in terms of generosity and relevance to his terroir, in this room with the unmistakable Bibendum. As throughout Provence, the off-season offers less regional expression: the scallops are Norman, with ravioli of razor clams and leeks, clementine hollandaise sauce; the guinea fowl supreme, a little overcooked, is in a walnut crust, parsnip purée, salsify and meat jus before the chocolate dessert with kirsch ice cream "like a black forest". The cellar, with its renowned labels, offers a few verticals of good Châteauneufs.
