Chef's Restaurant Anne and Julien Gleize's exemplary restaurant is the epitome of the city's charm. A warm Provencal welcome, an ideal terrace on the pretty square, a cuisine that is both refined and gourmet, so expressive of the seasons and the region. Selected products and a chef's touch that also offers locals the possibility of a controlled escape: Saint-jacques de baie de Seine salicorne et mandarine crème au corail d'oursin beurre blanc au vinaigre de cidre, tartelette d'escargots de Valréas en persillade espuma de pomme de terre ratte, filet de canette de chez Hugon carottes confites oignons et mendiants jus de viande in a remarkable €40 sequence, which concludes with an inventive apple sabayon cacao dessert. The wine cellar is organically oriented and forged through meetings with winemakers, and the service is very well orchestrated by the hostess.
