Nicolas Silhol's cuisine, under the watchful eye of Inge Froost, isn't everyone's, certainly not, and l'Accent isn't just another bistro. Open-mindedness and curiosity are the hallmarks of a menu with a variety of influences and moods: bao de canard confit aïoli et coriandre fraîche, onigiri au thon riz vinaigré sauce teriyaki, dos de lieu noir rôti émulsion beurre blanc condiment câpres, agneau confit effiloché en croustillant oignons doux des Cévennes sauce réduite... Lovely desserts (cheesecake passion sablé coco...) and a cellar featuring organic produce and local appellations (Costières de Nîmes, IGP Cévennes, clairette de Bellegarde...).
