Chef's Restaurant A young address that is making its way with loyalty and perseverance. In the dining room, Mélanie is the real keystone of the house, creating a warm, hushed atmosphere (carefully decorated, with pretty tableware), while Boris shows himself to be very comfortable with the seafood that's within reach of line and net with local fishermen: steamed langoustine, tansy, artichoke, lemon salt and savory broth, confit meagre (beautifully pearly cooked), fevettes, peas, sorrel with vermouth sauce, Limousin veal flounder, green asparagus, lemon and pistachio cream, a plump, gourmet dish, before dessert with grapefruit (Blasco citrus) and juniper, opaline with juniper berries, cream and grapefruit ice cream. A good, varied and enthusiastic cellar, highlighting the Vendée and Loire regions, about which Mélanie knows how to speak in an open and accessible way.
