Gault&Millau's review 2022

The Kinu recipe has been duplicated all over France and elsewhere, and this 2000s fusion applied with rigor and modernity finds a soft, silky setting here: Kinugawa-style sushi and sashimi, "new style" carpaccio, black cod with miso sauce, sea bass or beef filet à la Robata, tempura... Stylish, expensive but not overpriced, and right on target.
