Chef's Restaurant The contrast between the street and the dining room is quite striking. You go from empty to full in a friendly, Sautet-style atmosphere, skilfully maintained by maître de maison and chef Christophe Marchais. Whether business or family, the good taste of the country is evident, with local dishes that combine tradition and reinvention: a large poached egg and fried gnocchi in an autumn velouté with pumpkin, sorrel purée and goat's cheese, a Loire pike-perch in a chestnut velouté that could do with a little more spice, with an interesting risotto of petit épeautre du Velay, snails in tarragon butter and crisp romanesco for texture, a return to our roots with a sweetbread cooked on the barbecue and cream of chanterelle mushrooms in yellow wine, grandmother's purée, roasted butternut with black garlic and mustard seeds. Classic cellar with references from all over France (Leflaive, Lambert, Germain, Clos Rougeard, Pithon, La Rectorie, Léon Barral).
