Chef's Restaurant An unmissable institution in Champagne, a hotel with a great French tradition, where you can experience the fine service and cuisine of Jérôme Feck. He's been at the helm for seven years with admirable consistency, crafting fine, product-focused cuisine on two menus at €86 and €120, featuring artichoke tartlet and summer truffles, roast filet de saint-pierre, nage de févettes and consommé tom yum, falafel-crusted Racan pigeon, fried panisse and sweet-spice jus, cookie sacher, strawberry ganache montée and crispy lace. Pleasant service.
