Chef's Restaurant For over fifteen years, he has been one of Bordeaux's finest practicing Japanese chefs. Now at home on rue du Hâ, he puts his knowledge of the classics to good use in his well-adapted one-dish formulas at lunchtime (sashimi, tonkatsu, shrimp tempura, miso-marinated duck breast...), and in the evenings with a little more variety on similar themes. Good sake list, decent choice of wines, and of course the ideal tea accompaniment.
