Chef's Restaurant Everyone in Bordeaux, from connoisseurs to the curious, agrees: Oxana Crétu is developing a strong, open personality in her renamed restaurant (Inima, which means "with heart" in Moldavian, has replaced Cromagnon). In this simple yet warm and elegant setting, it's the plate that conquers the public, still brimming with creativity and energy, but now channeled, fresh and precise. The result is stunning, with well-selected products that play with acidity, iodine, saltiness, reduced juices and genuine culinary poetry: cuttlefish from the Basin, wasabi and obione, duck from Périgord, eggplant and Tasmanian pepper, with an original sauce of aronia berries (direct from Moldavia) on home-matured flesh, very pleasant white eaten with white chocolate and yuzu, peach jelly, plum blossom and peach sorbet. The cellar isn't huge, but it's open to the world of wine, and the service is smiling and attentive.
