The young restaurant to watch in the city center, a stone's throw from the cathedral. Thomas Dumont, whom we rewarded in his first year, confirms that he's a force to be reckoned with, with his modern tone and contemporary, committed cuisine, combined with well-controlled, well-used local, seasonal produce: a fresh cucumber starter, cucumber water, cuttlefish from Fécamp with Bigorre black brisket ice cream, fillet of sea bass from Brittany, spring onions and seasonal vegetables, lemon verbena sabayon and fish juice, blueberry mille-feuille with apple sorbet in an attractive lunch menu at €34. More noble ingredients in the evening, in a four-course formula at €50.
