Chef's Restaurant The early hype has obviously deflated around Tomy Gousset (Tomy&Co, Marso&Co), but his modern, trendy bistros remain as recommendable as ever. Set up just across from Les Arènes, Hugo (named after the chef's eldest son) continues to masterfully build bridges between continents, lighting up this fine bistro cuisine with cosmopolitan hues: veal tartare with gribiche sauce assembled like a millefeuille between layers of tacos (which are a little thick), roasted sea bream with black rice, chard and fried oyster mushrooms, before a nuanced dessert of candied pear, kiwi and ricotta ice cream, and almond puffed rice. The cellar is well-stocked (around forty references) and favors small producers. Dynamic, friendly service.
