It's one of the city's most emblematic hotels, and a favorite meeting place for Belfort locals, for its classic charm, understated elegance and timeless style. Today, the restaurant is run by Lucas Ansel, who offers a highly competent table d'hôtel. Today's classics are well executed: snacked scallops, pea purée, lemon-verbena gel and smoked bacon chips; grenobloise-style sea bream fillet, mashed potatoes with wild garlic; lamb fillet and lamb jus with zaatar, chickpea purée, Lebanese tabbouleh and bulgur; baba au macvin, honey-caramelized apples and apple sorbet. Market menu at €26. Excellent cellar with over 1,500 references.
