Gourmet Restaurant After their media experience, which helped them gain exposure, Hugo Riboulet and Albane Auvray were able to set up shop in the heart of Paris. They needed a concept (it's Paris!), and they've found it with this small new space dedicated to cakes and various coatings. They've certainly mastered the subject, showing a certain imagination to attract the neighborhood at snack time: veggie pie, gourmet pastrami pie, iodized trout pie, classic poultry pie. The garnishes are meticulous and well-seasoned, with vegetables and salads on the side, fruit nage or "tiramouss" for dessert with Valrhona chocolate mousse.
