Gault&Millau Academy's member Rightly convinced that physical and mental activity is the key to good health, Georges Blanc never stops. The dashing octogenarian, to whom his friend Guy Savoy confides "the only thing you haven't achieved is to look your age", is still on deck, every day, driving his business forward, in his office every morning for the day's business, but also in the restaurant to taste with the teams and drive the house forward. And if our Toque d'Or, a Gault&Millau academician, offers such a high standard to our impressed customers today, it's because the boss is there to motivate an increasingly brilliant team, with Florent Maréchau in particular as executive chef, bringing exceptional dishes to life. This year, although everything is always a continuation of what came before, especially in such a house with over a century of history, we had the impression of a completely renewed menu. Remarkable dishes such as pigeon aiguillettes for starters, flanked by a crispy pastilla; tourteau caviar with lobster jus; whiting with zucchinis and a vert-pré coulis; and poularde in a milky marinade, then roasted for exceptional softness. These are all dishes that you'd think would be revisited, but which turn out to be original, stunning and, above all, of a quality of finish, in terms of textures, texture and technique, rarely seen before. The very fine café miel muscovado dessert rounds off the affair, and both grand tables and lovers are delighted, pampered and pampered like princes for an evening, consecrating this stopover on the road to vacation as one of, if not the best in France. As for the wine list, it gives the enlightened connoisseur the same pleasure as that of a car enthusiast leafing through a Ferrari catalog: 150,000 bottles, all the splendours of Burgundy in tightly packed rows, every appellation, climate, winemaker, from the owner's mâcon to the inaccessible.
