Selected The address isn't easy to find, tucked away at the back of a commercial building on the outskirts of Saint-Jean-de-Luz, but it brings a breath of modernity to the area, with its modern ideas and ultra-minimalist decor. The whole place has an industrial loft feel, with exposed piping, waxed concrete, glass and steel, and offers a cuisine in tune with the times. À la carte: grilled corn French toast, foie gras marinated in verjuice, mushrooms and lemon pulp, spider crab and avocado, licorice, tarragon, green crab emulsion, Challans duck filet à la braise, burnt leeks and dates, grilled kombu butter and oil, Saint-Pée hazelnut soufflé. Trendy atmosphere.
