Chef's Restaurant In the heart of the country, in a small village on the banks of the Bidouze, Laurent and Isabelle Miremont's stopover is a pleasure you'll never want to miss, in a large, impeccably decorated Basque house, where you can enjoy regional cuisine. The chefs play with the local produce, offering new recipes such as pork trotters served in a galette with gribiche sauce and marinated black radish, pollack with lemon and garlic chipiron croquette, porcini mushrooms, leek and langoustine coulis, herriko rossini beef, cheek compote with red wine, carrots, pommes dauphines and chestnut condiment, or a dark chocolate/caramel/salted peanut rocher with Tahitian vanilla custard. In the glass, a selection of wines focused on the region. Formulas start at €37.
