Biarritz residents' appetite for novelty and healthy food is an asset for these young up-and-coming restaurants. Freya's sharp sourcing and well-executed instant cuisine, including surprise, one-off and set menus (€58 or €72 depending on the number of courses), allow Guillaume Chatillon's chef to make the most of his time without having to listen to guests' preferences. Everything is sourced locally, right down to the beverages - wines, beers, herbal teas and kkombucha - from wine merchants, coffee houses and producers.
