Gourmet Restaurant The Cannes incarnation of the famous Parisian brasserie lives up to its billing, with cuisine imagined by Pierre Gagnaire, and a venue of the expected standard, expressing all that is French chic. The house classics are mixed with a few more local ideas: a thick cream of caviar, haddock, smoked eel and poached egg, panko roasted scallops, celeriac purée with clementine juice, confit of suckling lamb shoulder with rosemary and petit épeautre à la provençale, beef tartare, savarin with amber rum. Cellar of fine labels: Louis Roederer, Domaine Ott, Girardin, Yquem, Romanée-Saint-Vivant, Haut-Brion, Margaux...
