Chef's Restaurant Something new has been happening here in recent months. The name is still the same, the place is still as clean as ever in the heart of old Cagnes-sur-Mer, but the score is now played by Alexis Cachat, former second-in-command to M.O.F. chef Alain Montigny at L'Or Bleu in Théoule-sur-Mer, and his partner, waitress emeritus (when she's not baking and saving lives as a volunteer fireman), Chloé Feuillet. The three blind menus in 3, 4 and 6 courses at €45, €60 and €89 "bistronomize" the plates in the best possible way. Dishes follow the seasons and market finds, such as zucchini flower stuffed with ricotta, olives, anchovies and fresh herbs; grilled octopus in vinaigrette, creamy avocado, red bell pepper coulis, fennel salad and ginger gel; Mediterranean peach, romanesco cabbage, tarragon foam, lightly creamed fish stock sauce; zucchini, green bean confit with Colonnata bacon and bohemian sauce... On the à la carte menu, certain dishes are becoming more sophisticated, such as quail stuffed with foie gras or filet of beef Rossini. Desserts are generous and indulgent, with chocolate cream, praline heart, brownie, caramelized roasted hazelnuts and caramel sauce, almond and hazelnut shortbread, vanilla poached apricots, vanilla ganache... The cellar follows admirably with some fine vins vivants. Plus, it's open on Sunday evenings!
