Chef's Restaurant With discretion, Stéphane Poulin offers meticulously-crafted cuisine in which he highlights the terroir, the product. Readable, expressive dishes that live up to their promises, with personal touches, in this quiet Basque house, an old farmhouse from the XVIIᵉ renovated in a contemporary spirit: after pleasant appetizers (foie gras panna cotta in particular), the 64° egg, fine ratatouille, Aldudes ham, parmesan mousse, the well-cooked line hake, Paimpol coconut with chorizo, fried sweet pepper, very aromatic langoustine espuma, and a good strawberry mara des Bois dessert, soft almond cookie, strawberry and lemon compote, strawberry siphon, basil ice cream. Véronique Poulin, who also looks after the cellar, offers an efficient and smiling welcome, highlighting the South-West and Spain.
