Good news that has taken root in this corner of Bidart, just two minutes from the beach. Marine and Olivier Henry's bistronomic table benefits from the former's warm welcome and the latter's experience, which includes training with Michel Guérard. The dishes feature organic and local produce, for an experience focused on the producer and the seasons. The €64 menu offers good value for money, with scallops, leeks, seaweed and Noilly Prat jus, a peach return with fennel, Meyer lemon and langoustine jus, duck pie, cabbage embeurrée and salmis sauce, and a chocolate and lemon ganache brownie with bergamot sorbet. Pretty solid cellar.
